Stylistically, Baron appears to be less classical and more opulent than neighbour Pichon Lalande, however, in bottle the wines adopt a more orthodox Pauillac character. Jean-Rene Matrigon chooses to vinify plot by plot using small fermentation vats and wines are typically aged in 80% new oak barrels. Of the 73 hectares of vines, 65% are planted with Cabernet Sauvignon and 35% with Merlot. The Tourelles is predominantly Merlot from the Sainte Anne vineyard and offers a juicy, approachable style of Pauillac that is delightful after just a year or two in bottle, but will also reward those with patience. There are two “second wines”, Tourelles and Griffons de Longueville. Their wines often exceed expectation at Southwold and are amongst the top performing “super seconds”. Pichon Longueville’s grand vin is a flamboyant and powerful expression of this noble Pauillac terroir. The 1990 Pichon-Longueville-Baron exhibits more of the roasted overripeness of this vintage, but it manages to keep everything in perspective. The cool, almost cellar temperature gives the wine more freshness and lift. The wine is transferred into oak barrels for aging after finishing its malolactic fermentation. Grapes are harvested and sorted by hand, and then macerated for 20-30 days, and fermented at 28-32 ☌ in temperature controlled stainless steel vats of varying sizes. The vineyard is situated at the southern end of the commune of Pauillac near border with the Saint-Julien-Beychevelle appellation.
